Shiraz and Syrah are names for the same grape variety. Its origins are French; it is not an indigenous Australian grape. Australian producers may use either name, sometimes to signal a stylistic direction, but the wording is not a guarantee that a bottle will taste a certain way.

Avoid the shortcut that all Shiraz is rich and all Syrah is light. Read the region, vintage and winemaking notes. A northern Rhône Syrah can be a useful French comparison without being an exact match for an Australian wine.

Flavour and structure

Blackberry, plum, pepper and savoury spice are common reference points. Warmer sites can give a riper impression, while cooler conditions can bring more peppery detail and freshness. Oak may add toast or spice. The actual wine depends on the site and the producer's choices.

Shiraz can be made alone or in blends, including with Cabernet Sauvignon. GSM usually refers to Grenache, Shiraz and Mourvèdre, also called Mataro. Check the blend rather than assuming the initials mean one fixed recipe.

Where to begin in Australia

Regional starting points, with variation within each

Place

A useful comparison

Barossa Valley, SA

Riper-fruited expressions and producers working with old-vine material. A label saying Barossa need not mean the fruit comes only from the valley floor. See the region guide for the distinction.

Shiraz with a barbecue or roast

For grilled lamb, a savoury Shiraz is a useful starting point. For a beef burger or charred mushrooms, choose enough fruit and texture to sit with the food. A heavily sweetened barbecue sauce can overwhelm a dry red, so check the sauce before choosing the bottle.

For chilli-heavy food, a very firm, high-alcohol red may be uncomfortable alongside the heat. A less forceful style or a suitable white can be a better match. Food pairing is a preference exercise, not a reason to increase how much alcohol you drink.

Still Shiraz and sparkling Shiraz

Sparkling Shiraz is a distinct Australian style. It is a sparkling wine, so its bottle, opening method and preservation equipment differ from those for still Shiraz. Do not use a still-wine preservation system on a pressurised sparkling bottle.

For shopping, confirm whether the listing is still or sparkling and check the exact vintage. Keep either style out of direct sun and heat.
