The Wine Society recommends roughly 10°C to 13°C for steady maturation. That is a cellaring guide, not a serving temperature or a precise point at which a bottle suddenly becomes damaged.

Avoid direct sun, the cupboard above an oven, the top of a fridge and an uninsulated garage. A rack may organise bottles, but it cannot protect them from a room that gets too hot. Measure the conditions before assuming a cupboard or spare room stays cool through summer.

Cork and screwcap storage

For longer storage, lay a natural-cork bottle on its side so the wine stays in contact with the cork. An intact screwcap does not need that contact, so bottles can be stored upright. Neither closure makes the wine immune to heat or light.

Screwcaps are common on Australian wines and do not tell you that a bottle lacks ageing potential. Decide whether to cellar using the exact wine, vintage, producer advice and storage history. Keeping a wine longer does not automatically improve it.

A regular fridge or a wine fridge?

Match the equipment to the job

Option

A useful role

Check before relying on it

Kitchen fridge

Chilling wine and keeping a resealed opened bottle cold

It is not the same environment as a cellar for years of storage.

Interior cupboard

Short-term storage if it really stays cool and dark

Measure summer heat rather than judging it on a mild day.

Wine fridge

A more controlled environment for bottles you intend to keep

Ambient operating range, ventilation, noise, usable bottle capacity and electricity use.

Professional storage

A possible option for a collection needing managed conditions

Access, insurance, fees and the provider's actual conditions.

Before buying a wine fridge, read its installation clearances and ambient temperature rating. A unit in a hot garage may be working outside its specified conditions. Advertised bottle capacity may also assume a particular bottle shape.

After opening: reseal and refrigerate

Replace the closure promptly and refrigerate opened still wine, including red. You can let a small amount warm before serving. Keeping the bottle on the table all evening exposes it to more air and heat.

There is no one freshness deadline for every bottle. Wine style, initial condition, how much remains and storage all matter. Check the wine when you return to it; a preservation device cannot restore freshness already lost. Do not taste from a damaged bottle or one showing unusual contamination.

Preservation tools have different jobs

A stopper reseals a bottle; a vacuum device removes some air; a gas system changes the atmosphere inside the bottle. Their compatibility and maintenance requirements differ. Buy for a real use, such as keeping the remainder of a bottle, rather than assuming an accessory will repay its cost.

For Coravin, distinguish needle-based Timeless, stopper-based Pivot+ and the separate Sparkling system. Follow the instructions for the exact model and closure. Do not use still-wine equipment on a sparkling bottle or substitute one model's gas or accessories for another. See the Coravin guide.

Bringing wine home in summer

Plan to get bottles out of a hot car promptly. For an online order, check how the seller handles hot weather and failed deliveries. Age and delivery restrictions still apply, so do not assume you can leave a parcel anywhere you choose.

Our Australian buying guide covers those checks. A few bottles stored thoughtfully may suit your needs better than a large collection without suitable conditions.

Sources and further reading

Sources checked 20 October 2026.

The Wine Society: storage and ageing

Coravin Australia: bottles and closures

NHMRC: Australian alcohol guidelines

For adults aged 18+. Alcohol and health guidance.

Vinabox Australia In an Australian home, the first job is to protect bottles from heat.
